This unique journey uncovers Australia through its most exceptional flavours. Designed for travellers who understand the intimate connection between cuisine and culture, this itinerary connects the producers, winemakers, foragers and characters whose craft reveals a deeper sense of place - where soil, season and soil converge in every glass poured and every plate set. Dine within the sails of the Opera House, taste the freshest Tasmanian seafood plucked right from the ocean, and soar into South Australia by private jet to enjoy perfectly paired wine and wagyu at the source. Private jets replace long road journeys, helicopters touch down among the vines, and tastings unfold not at crowded counters but across tables set just for you.
This is Australia told through its flavours - elemental yet refined, generous yet precise - where every course, every vineyard, every shared table offers insight into the land and the people who steward it.

WHERE YOU'LL STAY
DAY 1-5
Upon arrival into Sydney, you’ll be warmly welcomed by your private chauffeur and transferred to your luxury hotel. Sydney sets the tone - a perfect harmony of cuisine and culture. Your first unfolds at Bennelong, savouring refined dining within the Opera House's iconic sails, before taking your premier seats for a world-class performance - an elegant introduction to Australia's cultural spirit.
With your expert local guide, Sydney's bountiful surrounds open up. Soar by seaplane to the Hawkesbury River for degustation dining, uncover ancient rock art and abundant wildlife on the Central Coast, and sample top quality wines and local providores in the Hunter Valley.
Your culinary story continues with a flight to Melbourne and private transfer to regional Victoria. On the peaceful shores of Lake Daylesford, Lake House rests quietly among lovingly manicured gardens, just steps from their very own Dairy Flat Farm - complete with olive grove, vineyard and bake house.
Renowned as one of Victoria's most exclusive epicurean retreats, both indulgent and refined. Spend your days learning the art of sourdough, venture on a truffle hunt, or retreat to the treehouse spa. In the evenings, the two Chef-Hatted restaurant showcases the finest seasonal ingredients, featuring eight course tasting menus paired thoughtfully with exceptional wines.

DAY 6-9
Return to Melbourne to meet your local host for a curated exploration of the city after dark. As you slip through hidden laneways and intimate speakeasies, hear the stories that shape Melbourne's creative soul before returning to your peaceful hotel overlooking the Botanic Gardens.
Board your private jet for an extraordinary journey of wine, wagyu and wide-open landscapes. Soar above the dramatic curves of the Great Ocean Road before touching down at Mayura Station for a behind-the-scenes estate experience. Premium Coonawarra wines accompany a four-course wagyu degustation showcasing one of Australia’s most celebrated producers. Continue by private jet to the Barossa Valley and settle into The Louise, an elegant retreat set quietly among the vines.
Barossa days unwind slowly - the sun rises over vineyards viewed from your suite, a picnic is served amongst grazing kangaroos, and thoughtful in-room touches of port and artisanal cheese are discovered. Days are yours to shape - helicopter flights between cellar doors, exclusive tastings and VIP experiences, or the opportunity to craft your own bespoke blend. Here, indulgence feels effortless, deeply personal and always connected to the land and the people who shape it.
DAY 10-15
Fly south to Hobart and settle into your waterfront boutique retreat, where contemporary design meets Tasmania’s rich storytelling heritage. Your suite opens to sweeping views across the Derwent River to kunanyi/Mount Wellington, the light sparkling over the harbour.
Evenings invite riverside dining and the relaxed yet creative energy that defines Australia’s southernmost capital. Tasmania offers a plethora of gourmet delights, all thoughtfully uncovered by your local guide. For the freshest seafood, board a cruise out to the open ocean. Your guide knows just where to jump in, returning laden with delicious treasures. The fruits of your adventure are enjoyed aboard, a bountiful seafood feast - rock lobster, abalone, sea urchin, calamari oysters - all paired with chilled flutes of Tasmanian sparkling.
From here, head toward Saffire Freycinet - an architectural sanctuary overlooking pink granite peaks and Great Oyster Bay. Experiences are immersive and unique - put on your waders and head into a working marine farm, where you can enjoy as many oysters as you please, plucked right from the lease. Dining is an intimate expression of place - a refined celebration of Tasmania’s pristine waters, fertile soils and cool-climate wines, artfully composed and served against the ever-changing hues of the landscape.
As your trip comes to an end, travel back to Hobart via private transfer and reconnect with your onward travel arrangements. Alquemie’s team will ensure a seamless and memorable departure from this extraordinary Australian escape.
